Life in the Green Mountains came easily for Matt Corrente who, despite his childhood in coastal Rhode Island, always felt pulled towards the forests and fields of Vermont. Childhood trips to the north paved the way for Matt to feel at home as a student at Middlebury College. Even as a blossoming studio artist, Matt’s goal was to pursue a career in medicine, but that didn’t quite work out as planned…
Caroline’s Vermont roots run deep. Although she was born and raised in Concord, Massachusetts, her family spent each summer up at a camp on the lake in South Hero. Her beloved late uncle Jim Tobey, a resident of Addison county, was the builder behind that camp. Some years later, it was that same community of camp cottages on the shore of Lake Champlain that served as the backdrop for Matt and Caroline’s wedding...
They had met while working together at a tiny restaurant called Pistou, in Burlington. Matt had moved back to Vermont after working at some of the top kitchens in NYC, Boston, and Rhode Island. Caroline was polishing off her Anthropology studies at UVM. Newly wed, Matt and Caroline continued to work in the Burlington area. While Matt managed the Bluebird Restaurants, Caroline explored work in the non-profit sector but something didn’t feel right…
Realizing that Burlington didn’t feel like the right spot to start a family, the Correntes set their sights on Middlebury. For Matt, it was a homecoming of sorts, a return to a small town he loved and a chance to run the kitchen he had worked in during college a decade earlier. For Caroline, it was an opportunity to bring her childhood memories full circle and live out her own adventure in Addison County...
Things really clicked when Caroline realized that she wanted to take her passion for baking and turn it into her profession in order to join Matt in the culinary arts. So she flew to Paris for pastry school at Le Cordon Bleu and got to work on mastering the art of brioche. Upon her return home, and after their son Casey was born, she needed to find a way to make it all work. So, she started the Haymaker Bun Company. Now, across the state, there are amazing buns available for all to enjoy. Both sweet and savory. She’ll tell anyone she meets, you’ll love her buns...
And that brings us to today. A baker and a chef who share a love of Vermont, a simple life, and simple food…
Always wanting to open a place together, they are pleased to bring you The Arcadian. An Italian restaurant celebrating homemade pasta and fresh seafood through the bounty of Vermont. The restaurant is also home to the Haymaker Bun Company, offering morning buns and other pastries, espresso, drip coffee, and a Sunday family meal. Matt and Caroline have found their home and can’t wait to share it with you.
